Flavor on Reserve

Four simple herb sauces to preserve your fall garden harvest

Every year at this time, I make these four freezer-friendly herb sauces from cool season harvests, and highly encourage you to do the same. By dedicating a bit of time now, you can create intense, fresh flavors to keep in the fridge or freezer, instantly elevating your winter cooking. They are the ultimate win-win: a sustainable way to avoid waste and a shortcut to garden-fresh meals when the days are shorter and darker. Mood enhancing goodness. All sauces will last at least six months when kept frozen in an airtight container.

Confession time: I own five freezers. As I’ve admitted before, I own canning equipment and adore a good mason jar but I’m just not yet a canner. I’m sure that will change as my orchard matures but for now, from my harvest kitchen (and overpacked freezer) to yours…enjoy!
